Spicy Pork and Eggplant Stuffed Spaghetti Squash with Hungarian Wax Peppers
Ingredients
1 medium spaghetti squash
1 lb ground pork
1 medium eggplant, cut into ½-inch cubes
2-3 Hungarian wax peppers, stemmed, seeded, and finely chopped
1 small onion, chopped
3-4 cloves garlic, minced
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp paprika (sweet or hot, depending on preference)
½ cup tomato sauce (or crushed tomatoes)
¼ cup chicken broth or water
