Ingredients for a Spicy Picadillo

  • 1 tbsp butter, or your favorite oil

  • 1 lb ground pork from Crooked Pine Ranch

  • 1 medium butternut squash, peeled, seeded, and diced into 1/2-inch cubes

  • 1 large onion, diced

  • 2 cloves garlic, minced

  • 1/2 tsp dried jalapeño powder, or to taste from Parks Farm

  • 1 tsp cumin powder

  • 1/2 tsp dried oregano

  • 1 (15 oz) can diced tomatoes, undrained

  • 1/4 cup green olives, sliced

  • Salt and black pepper to taste


Cooking Instructions


  1. Heat butter in a large skillet or Dutch oven over medium-high heat.

  2. Add the ground pork, breaking it up with a spoon, and cook until browned.

  3. Add the diced onion and garlic to the skillet and sauté until softened, about 5 minutes.

  4. Stir in the dried jalapeño powder, cumin, and oregano. Cook for one minute until fragrant.

  5. Add the diced butternut squash, canned diced tomatoes with their juice, and sliced olives. Stir to combine.

  6. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 15–20 minutes, or until the butternut squash is tender.

  7. Season with salt and pepper to taste before serving.

  6. Using a tortilla press or two sheets of parchment paper and a heavy skillet, press each ball into a thin, flat tortilla.

  7. Cook each tortilla for about 45 seconds on each side, or until lightly toasted and soft.

  8. Keep the finished tortillas wrapped in a clean kitchen towel to keep them warm and pliable until serving.


Serving Suggestions for the Picadillo Tacos


To serve, warm your tortillas and fill them with a generous spoonful of the spicy picadillo. But don’t stop there!
